Tea Categories
The three main categories of tea are black, green, and oolong. Within each of these categories there are many varieties .Green and Black and Oolong teas come from the same tea plant species, the difference being the processing of tea Black tea undergo several hours of oxidation during preparation. Oolong tea is partially fermented and Japanese green tea is steamed to stop oxidation.
There are many varieties of flavored teas . The most popular is Earl Gray and Green Earl Gray flavored with oil of bergamot , a citrus shrub native to Italy .   Many teas are flavored with essence of fruit or leaves. Chai - is a blend of tea and spices  which  is enjoyed  hot or iced .

Caffeine
All tea (Camellia Sinesis)- green tea , oolong and black tea contain caffeine.
The method of brewing tea determines how  much  caffeine  will dissolve in water . Longer steeping and hotter water will result in more caffeine . Where
 as shorter steeping in  cooler water will result in less. The strongest cup of
 tea has much less caffeine than a cup of coffee . Few decaffeinated teas are available due to lack of demand . Most of our fruit teas are avaliable decaffeineted .

Camellia Sinesis
the tea plant, is indigenous to both China and parts of India. Wild tea plants can grow 90 feet and above.In the past monkeys were trained to pick tea leaves and throw them down where they were collected. Today tea plants are cultivated as a plantation crop and therefore the plants are kept to a height of about three feet , for easy picking.
